Tortellini with Mushrooms, Artichokes, and Sun Dried Tomatoes in a Lemon Butter Sauce


This dish combines almost all of my favorite foods. There is just something about the paring of artichokes and sun dried tomatoes that makes me really happy. If you didn't notice, this is a vegetarian dish, but you could just as easily pick up a different variety of tortellini. I have seen a ton of flavors lately, including Italian sausage or chicken filling.

Wow, that looks delicious! It's times like these that I wish my husband would eat things like mushrooms and artichokes. He's really missing out.

Definitely going to have to make this. We love tortellini... I'll just have to leave out the mushrooms, but the artichokes will be a big hit at my house!

what a great combination for sauce! If you were to add some portobello mushrooms in there, thickly cut, a meat eater may even be satisfied that there's no meat. I know that trick works for my dad when i cook for him. They're very "meaty"

Next week I'm posting my recipe for homemade ravioli - who needs the sticky, tough, rubbery store bought stuff when you can make your own! :)
