Crock Pot Mac and Cheese


Comfort food + Crock Pot = yes.


I really enjoyed this side dish (to a few meals-it makes a lot) because of how simple it was to make and again, I was able to confess my love to my crock pot.

I have a problem. I know.

Other than waiting for the noodles to boil, this came together quite quickly and made the house smell wonderful and cheesy. Feel free to add MORE cheese or even throw this into a baking dish with butter, cheese, and breadcrumbs on top and place it under the broiler for a few minutes. Yum.

Mac & Cheese Bites


My husband has 5 food groups: Mexican, pizza, chicken finger baskets, cereal, and mac and cheese. Non of which are too hard to make or mess up...nor will they let the average 34 7 year old down. Love you husband! :)





Mac and cheese in a bite size portion sounded great to me! It didn't come out of a blue box, but it was served on a blue plate. Take that Kraft.

Ravioli with Browned Butter Balsamic Sauce



I have created a monster. A delicious, creamy, rich and addicting monster.


Next to breakfast, Italian food is one of my all time favorite things to make eat. Top it with browned butter and I'm in!


This recipe calls for balsamic vinegar and PLEASE use a good one. Quality balsamic vinegar will make or break this dish. I personally used a balsamic vinegar with raspberry and fig. See, I told you it was a monster.



I also chose a four cheese stuffed ravioli. I would stick with a vegetarian type ravioli for this recipe. I think anything with meat wouldn't mesh well with the sauce. Squash, spinach, and mushroom would all be great choices!

Skinny Manicotti

This is actually a reader requested recipe. My most popular recipe of all time is my Skinny Chicken Parmesan and is the recipe that prompted this request. I know, it took me forever and I'm sorry. This was actually the first time I have ever made manicotti but won't be the last! I was really intimidated by it, but it turned out to be very easy! 

I divided up my recipe between 2 smaller baking dishes. One to eat right away, and one for the freezer. 






The recipe yields 7 servings (2 manicotti each) which equals 375 calories per serving. Serve with a big Italian salad and I would call it a success! Enjoy!

Tortellini with Mushrooms, Artichokes, and Sun Dried Tomatoes in a Lemon Butter Sauce


This dish combines almost all of my favorite foods. There is just something about the paring of artichokes and sun dried tomatoes that makes me really happy. If you didn't notice, this is a vegetarian dish, but you could just as easily pick up a different variety of tortellini. I have seen a ton of flavors lately, including Italian sausage or chicken filling.
