Three Bean Crock Pot Chili {recipe}


This is such a simple chili recipe and is so good! 

Its full of protein and high in fiber which makes this dish very filling and satisfying. 

You can make this chili vegetarian by leaving out the first ingredient. I added ground turkey to ours and it was great but it would also be good with ground chicken or beef. Whatever you have on hand!

I love a good crock pot recipe! This makes a large batch so with our family of 3, we were able to eat this a few nights. 


Three Bean Crock Pot Chili


1lb fat free ground turkey breast, chicken, or beef
1 small onion, chopped (I sometimes use the diced onions you find in the freezer section. My husband doesn't like onions and they give it a much milder onion taste.)
1 (28 oz) can diced tomatoes
1 (16 oz) can tomato sauce
1 (4.5 oz) can chopped chilies
1 (15 oz) can chickpeas, undrained
1 (15.5 oz) can black beans, undrained
1 (15.5 oz) can small red beans, undrained
Chili Seasoning (I used half a pack of a chili seasoning packet that was put into my cart at the grocery store. True story.  What can I say? I'm a little spacey sometimes.)

Again, you can see Great Value and I are friends. 



Brown up your ground meat of choice in a medium sized pan until cooked through. (I did this while unloading the dishwasher the night before.) Drain fat from the pan, and move meat to your crock pot. Here comes the easy part, add in all the ingredients from the cans and chili seasoning, stirring to combine. 

Cook on high for 6-8 hours. 

You can do many different things with this chili! Top with cheese, red onion, corn bread, jalapeno, tortilla chips, avocado, Fritos, you name it! 


You can totally prep this the night before. Just follow the directions above, then place in the fridge. I took mine out and placed it into the crock pot just before I left for work. It was SO NICE to come home to a stress free dinner!
