Hashbrains

When given the opportunity to work with Country Crock, I was looking forward to cooking with it. I'll be honest, I TOTALLY forgot about Country Crock. Why? No idea. I grew up with it in fridge my entire life, and my husband told me it is all he has ever used. What can I say? I'm a creature of habit, especially when it comes to the grocery store. This opportunity came at just the right time...I was out of my usual tub spread.



The Clare Crespo Cookbook is full of really fun and creative ways to use Country Crock AND veggies for kiddos who might be a little picky when it comes to the dinner table. I am a pretty adventurous eater, and thankfully I have passed that along to Austin. Honest, I have sent photos of him eating cherry tomatoes and carrots like they are candy. Nevertheless, many of the recipes are just FUN! The one I chose, Hashbrains, would be SO cute for Halloween! Little potato brains slathered in ketchup. Yum! I'm pretty sure store bought frozen hashbrowns would work just as well with the recipe. Just make sure they are drained properly!

Even if you aren't feeling very creative or just don't want to play the game of "Hide the Veggies," I love steamed broccoli or carrots with a dollop of Country Crock! I'm not alone-8 out of 10 kids thinks veggies are delish with Country Crock.

Mmmmmm. Country Crock. Reminds me of home.... My daughter used to stick her finger in the tub and walk around eating it like it was peanut butter. Ha (I then moved it to a higher shelf so she couldn't reach until she outgrew that.)

Those hashbrowns looks DELICIOUS! :) They really do look like little brains, HAHA! Oh! my hubs made your delicious spinach manicotti recipe again except he made it into lasagna and it tasted amazing!! So props to you again for the amazing recipe :)

Oh my gosh. These look absolutely scrumptious!! I can't wait to try out this recipe! Country Crock is what my family has always used and is definitely what I use now!
