Say what?

Yes, I'm jumping on that bandwagon.

Sh*t Nobody Says.

There have been about 3 dozen spin offs of the original Sh*t Girls Say, and they are all hilarious. Ruthie shared this one today and I think I have watched it 7 times. Comedy at its finest.

Skinny Pizza Rolls

I have shared several sweet recipes, so thought I would share a savory one with you today! I originally found this on Dashing Dish. Katie is one of my favorite bloggers and is a true mentor.

I make these pizza rolls a few times a month. Don't be intimidated if you have never used wonton wrappers before, they are very easy to use. You can find them in the produce section of the grocery store, paired with the eggroll wrappers. These make a great dinner paired with a salad or would be great for the upcoming Super Bowl!

With the use of turkey pepperonis and wonton wrappers, these pizza rolls come out to be 30 calories each. Yes, 30. My husband (the ultimate taste tester) LOVES these. I promise you won't be sacrificing any taste or nutrition by leaving the frozen ones at the store.

What I love about these rolls, is how diverse you can make them. You can add any other typical pizza toppings to the mixture, sausage, chicken, veggies, you name it!

**The original recipe calls for regular turkey pepperoni. I had the mini turkey pepperonis on hand. By using these, I was able to skip slicing the pepperonis.***


Skinny Pizza Rolls

Prep Time: 15 minutes 


Bake: 450 degrees for 10-15 minutes


Cool: 3-5 minutes


Yield: 24 rolls

Ingredients:
1/2 cup mozzarella cheese
1/2 cup tomato sauce OR marinara sauce OR pizza sauce
1/4 teaspoon garlic powder (or more to taste)
1/4 teaspoon Italian seasoning (or more to taste, I also substitute fresh basil occasionally) 
20 turkey pepperonis
24 wonton wrappers
2 tablespoons Parmesan cheese (for sprinkling)



Preheat oven to 450 degrees. Line baking sheet with foil and spray with non-stick cooking spray. 

In a medium bowl, combine tomato sauce, mozzerella cheese, and spices. Slice pepperonis into quarters and add to mixture, stirring to combine. 





Add a tablespoon of filling to the center of a wonton wrapper. 

   

Dip your finger in water and trace along the top edge of the wrapper. Bring the bottom point up to meet the top point and press firmly to seal. Place roll onto baking sheet. Repeat until all wrappers have been assembled. 


 Lightly spray the tops of the assembled rolls with non-stick cooking spray and sprinkle Parmesan cheese over rolls. Surprisingly, the Parmesan cheese in the plastic tube works best. It gives the rolls that "cornmeal" type feel. I had fresh on hand, so that's what I used!


Bake for 10-15 minutes or until golden brown. Just like pizza, it is always best to let it cool a few minutes before serving. Things seem to stay together better that way. Enjoy! 

**EDIT**
I thought I would also add, that I normally double the recipe to use all of the wonton wrapper up. I end up with 2 baking sheets of pizza rolls. One sheet goes into the oven and the other goes into the freezer. Once frozen, I add them to a large freezer bag in single layers with parchment paper in between each layer. They freeze SO well and just like the store bough frozen pizza rolls, they are so simple to take a few out and bake!

1. Ok, so I know this happened last week, but I had so much fun taking Austin to the Thunder game!


Let's talk about that guy in the background. He kept asking "Superman" to go get him a Crown and water. Like a million times. Be quiet. BUT Kristin Chenoweth sang the National Anthem. Holy cow. A.M.A.Z.I.N.G. Like, I think I almost cried. (P.S. She's from Oklahoma.)



2. I got to Skype with these ladies!!! SO.MUCH.FUN. Like, I'm obsessed with Skype now and want to randomly call them. Technology is fun. 



3. Dinner date-just me and Austin! I had such a good time. :)





4. Had a surprise family date last night! We went to Charlestons! My fave.

Hello! Happy Monday! Now that the holidays are over, I hope we can all get back to some kind of normal. I packed up Christmas this past weekend and now the house looks a bit bare. It sure does come and go quickly.

frantic.

In other news, I'm pretty much frantic when it comes to a blogging/editorial calendar. With my new camera and mixer, I'm DYING to become more of a foodie blogger, but guess what? That takes a lot of time and planning. Add an entire NBA season (read: my husband basically has a ticket to every Thunder home game), and I just don't have the means for it all. So until I figure it all out, you get random posts like this one!

christmas

Whoa! So, Christmas came and went in a blur. How was your holiday weekend? Ours was...busy? Holidays = lots of driving for us. This was truly was the best Christmas I have had in a looong time, and no I'm not saying that because of all of the fabulous and unexpected gifts I received like:

A KitchenAid mixer in RED from my mom and sister.

A Keurig from my mother in-law!!!

AND A CANON REBEL T2i FROM MY HUSBAND!!!!!!!!!!!!

I have done nothing but take photos all weekend long. Wanna know what its like to be follow around by the paparazzi? Just go hang out with Allison after she gets a new camera. I am going to take a class in OKC  next month with Melissa-Pineapple Lily, who by the way, was the FIRST person I text when I opened my camera! The manual is 258 pages and I think mine is written in Chinese. Ok, no not really...but I really need/want to know how to use this thing correctly! 

This is seriously the first moment I have had to breath, so I don't have a lot of words for you tonight. Not to mention I have felt pretty yucky the past few days. My normal life starts again tomorrow and I have TONS to share with you. Until then, here are a few photos from the weekend!
